The Whiskey Still, Pot Still

Pot stills are the modern descendant of the alembic still. They were among the earliest still types made to create spirits. Pot still are relatively inefficient which can be beneficial when making whiskey. For example, when making neutral spirit with no flavor and high alcohol yield you would use a reflux or column still. For whiskey one needs to make a product that maintains the flavors of mash. In this situation the pot still is optimal.
A pot still possesses 4 main parts: We will look at each one in more depth.
Pot: The shape of the pot is normally a cylinder that is wider on top than the bottom. The pot is filled with the fermented mash and heated up with fire or an internal heating

For example, when the vapors rise up the neck and into the lyne arm the temperature becomes cooler and the less volatile compounds (water, flavor, etc.) change from a gas to a liquid. If the lyne arm is ascending at a 45 degree angle those compounds will flow back into the wash. This gives you a 'lighter' flavor and increased alcohol content in the final product. On the other hand if the lyne neck was angled down at a 45 degree angle the less volatile substances will condense and flow into the condenser along with the ethanol vapors thus giving the distillate a more flavorful, 'fuller', taste.
Condenser: The condenser cools the ethanol vapors to a temperature that is less than the boiling point of the ethanol. Thus, it condenses the vapors to liquid. Condensers may be cooled by the surrounding air temperature, moving air (a fan) or water. With a water cooled condenser the cool water will be pumped through a coil or around the exterior of the tube that carries the ethanol vapors. Different types will utilize various methods. The key is to chill the vapors so that they drip into a collection container versus escaping into the atmosphere.
In the long run, the distiller must experiment with numerous mash recipes, still shapes and designs to create the end product that the distiller set out to create. Bottom line, take notes, don't rush, have fun and try new things
The answer to this problem was to put a federal tax on liquors and spirits, like moonshine, white whiskey, hooch, mountain dew, etc. “For these early moonshiners, making and selling alcohol wasn't a hobby or a way to make extra cash -- it was how they survived” (Grabianowski). Moonshine is typically made with corn mash. Moonshine was once banned under the 18th Amendment to the United States Constitution. However, the liquor-controlled laws forbid moonshining focus mainly on evasion of revenue taxation on spirituous and intoxicating liquors, and are required by the Bureau of Alcohol, Tobacco, Firearms and Explosives of the United States Department of the Treasury (Wikipedia). The enforcers of these laws are known as “revenooers” or “revenuers.” Early in American history, these federal agents were attacked when they came around to collect the tax on liquors and spirits, and a number of them were tarred and feathered (Grabianowski). These problems arose with the federal agents, or the “revenuers” because they were trying to make these moonshiners and farmers pay taxes on their profit, interrupting their income and profit of making and selling alcohol. Moonshine became a part of the daily life of these citizens because of the money being made, having to pay the tax would risk being able to feed their families and make a living. Whiskey was created in Ireland and was called “Usquebah” and during the 15th century. A document that was written by Morysson, a secretary of a lord during the rebellion in Ireland that dates back to 1599 stating that Dublin and many other cities in Ireland had taverns where alcohol was sold but it also carried a distinctive alcohol called the Usquebah/Usige beath (water of life) which is the best of it’s kind. The highlanders who were massive landowners and whiskey fanatics were able to obtain the license to make whiskey, but were not financially motivated as the lowlanders. Malt Whiskey take years to process which the highlanders wanted to stay with the same process where as the lowlanders synthesize grain whiskey and malt whiskey which take little time to mature. Condensing – When cooled, the particles in a gas have less kinetic energy resulting in them moving about less through loss of energy and less energy results in an attraction between the atoms. The particles reach a point when they are sliding past each other, the condensation point, and have become a liquid.
