Chapter 21, Problem 17A
Interpretation Introduction

Interpretation:

Denaturation of protein needs to be explained.

Concept introduction:

The change in the protein structure from the complex level to a simpler level is coming under the denaturation process. The loss of stability and their activity and the helix structure is disturbed during the denaturation of proteins.

Answer to Problem 17A

Modification of the structure of proteins is completed by the denaturation process with the help of bond breaking.

The denaturation is affected by the temperature, pH, types of solvents.

Explanation of Solution

In the denaturation process other than the primary structure of proteins secondary, tertiary, and quaternary proteins structure changed.

The factor participated in the process of denaturation are as temperature, pH, and nature of the solvent.

Temperature- The protein structures are bond with the help of hydrogen bonding. With the increase, the temperature reduces the strength of hydrogen bonds and weakens the affected non-polar hydrophobic interactions.

pH - The pH of the solution is important for the protein structure. The effect of pH on protein structure because it changes the number and nature of hydrogen bonds.

Nature of solvent- Different type of solvent changes the interaction of the hydrophobic ends of proteins structures.

Conclusion

Proteins are stabilized due there linkages and bond interaction. The change in the stability of the structure of the protein is called denaturation. In this process, there is a loss of properties of the proteins.
